Does anyone know whether there is some light weight PBX software that supports ZRTP that I can run on an embedded Linux system, for instance a router running DDWRT?

In order to benefit from the ZRTP protocol, the ZRTP needs to be used end to end. Therefore all you need is simple SIP proxy and simple RTP proxy. Not Asterisk. The proxy will help to solve the NAT traversal issues and route SIP signalling and forward the RTP traffic.
So router running any SIP Proxy (for example Kamailio) and RTP proxy will do. Very little processor power is needed.

ZRTP seems so far impossible to tap. The only possible week points are the end points. NSA and other spying agencies must be very unhappy from it. So far they managed there is currently no hardware manufacture which would support zrtp and open-source projects based in USA has stopped developing.
